We care for our Blue Tequilana Weber Agaves from the plantation of the first born hijuelos into our rich red soil until 6 years later when they have the perfect amount of sugar and are ready for the “Jima“, the harvest made by our Jimadores who have a history of generations perfecting the craft.
Once we have finished the Jima and we have the “piñas“ from our agaves, the process of making our tequila continues at our production plants where the agaves are cooked for 24 hours in ovens before starting “la molienda“ or grinding to extract all the cooked agave juices that will be fermented and distilled to produce our 100% agave silver tequila Híjole!
